I need to have a log in and Password and then just simply allow the people access to the site and WITH an email to them stating What their username and password is.

Ive had a few problems with the wp mail settings but fixed that...

How do I now have/ADD a password, can i simply add it as a field in the settings? What should the "option_name" be then for WordPress to recognize it?

And how do I set up that the mail to them has their password and username PLEASE

Thanks so much! Any help is greatly appreciated

If you are asking about how to have the user create a password at registration, the option name must be "password". See "Add Fields" in the User Guide.

In most cases, you don't need to change anything to have this emailed to the user (it is automatic). However, if have the plugin set for moderated registration, you can't email a user created password when the user is approved - it has to be sent when they register. See Email Shortcodes in the User Guide for more info.
