 * Is it possible to enable this plugin to work with Gutenberg, so we can use the
   WordPress page builder to format our events? It looks like the classic editor
   instead of the new editor. Thanks.

 * You can uncheck the “Disable Block Editor” option in MEC settings > Single Event
   > Disable Block Editor (Gutenberg), so block editor should be enabled and you
   can use them.
