I think the biggest thing about customizing wordpress to look less “bloggy” is in the way you work with the theme you choose. Creating page templates, arranging sidebars with exactly what you want (even hard-coding things in if you must), and so on.
I’ve yet to see any themes pop up that don’t make me think, “Yep, that’s a wordpress site” or “Yep, it’s a blog” unless they’ve been really customized by the site owners to NOT look like the originals.
Spend some time looking at theme development, the things that make wordpress work, that sort of thing. And “worst” case – hire someone to make the changes for you.
A possible example is the News Watch page at National Wind Watch: http://www.wind-watch.org/news/. The main thing, I think, it to simply remove all the “bloggy” or meta items, such as author, comments, links, etc.

that’s not a specifically designed site for news… it is just the usual K2.
