WooCommerce Sort by Date

I am looking to use WooCommerce to show events but I need them to be sorted by event date (soonest first) – this is different to the date the post is made live.

A secondary thing is then for a date that has passed to automatically remove the product from the shop but its still accessible directly from the URL

I have already;
1) installed WooCommerce
2) seen a way to edit product pages easily (https://www.divikingdom.com/product/woocommerce-builder-divi/)
3) seen WooCommerce filters (https://woocommerce.com/products/product-filters/) that I want to use.

Its just finding a way to sort by date
