Thanks for reaching out. Usually, when the emails are not logging in to Email logging plugins, it is likely that the emails are not sent at all. However, you can check if any emails are failing by going into WP Mail SMTP > Tools > Debug Events. That will hold the record of any failed emails with the error message.
If there are no errors on debug events, you might need to check if any plugins likely WooCommerce extensions are conflicting or creating the issue.
In the meantime, please make sure you aren’t getting any SPF/DKIM warnings when sending a test email from WP Mail SMTP > Tools > Email Test.

Thanks for the details! The error on the debug events isn’t about the WooCommerce order emails. That is when you’re testing emails via WP Mail SMTP test and the error means the site isn’t able to connect to the SMTP host you’ve configured.
Based on this if the emails are not logged in Email Logs and there are no errors on debug events, there is a possible email sending conflict with other plugins or the WooCommerce extensions you’re using.
To troubleshoot the issue, I’d recommend deactivating the other plugins one by one until the emails get logged in the Email Logs.
