I do have a custom order status between Processing and Completed, but Completed is still being activated.
If you are referring to WooCommerce > Reports, it’s being replaced by the new Analytics section.

Could you go to Analytics, and check if the sales are reported correctly there? If not, please try “Importing Historical Data” in Analytics > Settings.

Analytics is still showing zero sales. I’ve gone to “Import Historical Data”, but it doesn’t seem to ever finish importing.

First, could you please send me a copy of your live site’s system status report? You can find it under WooCommerce > Status in the dashboard. Click “Get system report” and then the “Copy for support” button. Once you’ve done that, paste it into your reply.
Second, if you remove this custom order status code from the live site, do things work then if you retry the import of historical data?
Another thing that may help is going to WooCommerce > Status > Tools and running this:

Update on this, the Action Scheduler had stalled, but is now flowing again and this has resolved the issue.
