Does the payment gateway that you’re using specifically support Canadian banks? Note that there’s not a single payment gateway that can support all banks around the world due to the differing laws and banking systems.
IBAN is used mostly in Europe. So if IBAN is the only option, it just means the gateway does not support Canadian banks and your specific bank.
What Woocommerce payment gateway are you using by the way?
I am using the default payment gateway which woo-commerce is offering, can you recommend one?

Thanks for the clarification.
If you’re referring to the default “Direct bank transfer” payment gateway, all the fields in the “Account Details” section are optional — so you can leave out anyone that your bank/country does not support. Also, if there’s any additional information that you need to provide, you can include it in the “Instructions” box.
But please note that this is an OFFLINE or MANUAL gateway, meant for wire transfer and such. The information you enter here is merely shown to the buyer: Woocommerce cannot use this to process payment automatically. The buyer will then have to then take the information to their bank or internet banking account (where possible) and manually request payment to be sent to the account details you provided.
Is this really what you want to do? If so, I’ll suggest you leave out the “Account Details” box entirely, ask your bank for wire transfer or direct deposit instructions, and include the full details in the “Instructions” field. For Canada, that is likely to include the Transit number, Financial institution number and Account number (all of which are on your check) — but please confirm with your bank!
