Hi I’m a noob, so forgive me if this is a silly question.
It appears that you cant really update a Child Theme after you create one.
So why do we make child themes, instead of just editing the main theme and then not updating it?

Suppose there’s a bug in the theme and/or a security fix. Would you want to ignore that update? That’s why one makes child themes — so you can pick up updates with only a small chance of breaking your theme. With a child theme, you should review the files that have changed that you modified in your child, but 99.99% of the time, you don’t have to make any changes. (At least, that’s my experience).

The idea is that child themes don’t usually require updates.

Child themes are recommended if you want to modify the existing theme, so when an update occurs, it will not override the changes you made and your theme will continue to be secure. 🙂
