I’ve just started using schemas on my site and have come across the field for the ‘Service’ rich snipped called ‘Provider Location Image’. The text under the field doesn’t explain what it means I haven’t been able to find it or anything like it on schema.org.

What does ‘Provider Location Image’ mean? What sort of image is it meant to be?

This is basically asking you for a map that shows your location or area that you cover. Provider Location is the actual location of the owner of the web resource. So for example our business which is based in the UK offers work to all businesses within the UK there for our picture is a map of the UK.
Content location is the area described by the resource. In this example a holiday company would advertise holidays in London, Devon and Yorkshire which are the areas described in the ads.

I hope this helps you to understand the difference.
