    Custom Post Types that do not use an editor should continue to work like they did previously, although there are various settings they can use when creating the post types which may affect what editor screen comes up.

    There are multiple ways, whatever introduces the CPT might disable the new editor using a filter, by including meta boxes that declare that they do not support the new editing experience, or by setting the show_in_rest value on the CPT it self to false, so it’s a bit hard to say exactly which one is being used. (those are just off the top of my head).
