What file to change next_posts_link() in?

  • generally, look into the usual index.php, archive.php, category.php, etc.

    if there is a ‘get_template_part( ‘content’, … )’ code, follow that clue and look into content-…php;
    sometimes the theme calls a function (often ‘nav’ in the function name) – then search functions.php of your theme;

    the possibilities are endless.

    you haven’t posted the name of your theme, but in Twenty Eleven it is in a function (this is called in index.php etc):

    <?php twentyeleven_content_nav(); ?>

    the code for it is in functions.php
