It looks like there is something blocking the input fields on your site.
You can see on my test site and other sites using the WooCommerce Stripe Gateway plugin, that the input fields accept values without any issues. Here’s the screenshot from my test site:
To help you resolve this issue, could you share a copy of your site’s System Status Report with us? You’ll find it at the top of the page under WooCommerce > Status > Get system report > Copy for support (after you scroll down a bit). Paste the result here in your reply.
