Hello @celo1910 you can categorize your stories within Web Stories by going to Document tab > Taxonomies > Categories which you can see an example of here.
You could also create a post category by going to Posts > Categories and setting up your desired categories. Then when you add Web Stories to a post you can select your post category for example if you added ‘category1’ to your ‘new-story’ then your post url would be http://www.yourwebsite.com/category1/new-story.

@celo1910 Are you looking to have a page/post per category with all stories for that category on a single page?
@celo1910 In this case you could use the post category as mentioned above to tag that page with a category name and use a Web Stories block within the gutenberg editor of that post and select all the stories you wish to display.
