    I would really like to have the most recent post fully displayed and then just have the others in a preview form with the link “continue reading”, but I don’t know if that is really an option.

    But, I can’t even find the way to enable the “continue reading” option, but it is displayed in the demo of the theme, and on other people running the theme! I know it is there somewhere.

    You can add read more links anywhere you want in your post.
    just go to one of your post, then place your cursor where you want the read more.
    In the wysiwyg editor, hit the button that looks like a piece of paper that’s cut in the middle. It should be next to the ABC button.

    That will insert a read more link.
