using wordpress for a link directory

I’m a wordpress newbie so would appreciate any advice you seasoned pro’s can give!
I have wp installed at http://www.golfbettingguide.com/dir and have my site theme working.
I want to use wp as a link directory similar to http://www.jpfco.com/dir/ which also uses wp.
Basically mine will be a little simpler in that it will
just have categories to list submitted sites under
(after they’ve added a link to my site on theirs). Categories like “Sports Betting”, “Golf Equipment” “Poker”, etc.So I have a few questions:
1) The jpfco site has an “add your url” page set up at http://www.jpfco.com/dir/add-your-url/
and a “link to us” page at
http://www.jpfco.com/dir/add-your-url/link-to-us/I want to duplicate this but I’m unsure where I need to install my equivalent pages. If I create sub directories within my wp theme folder and place index.php pages in them, wp doesn’t find them. Does anyone know where they should go so that I can maintain those directory names?
2) Are there any good wp plugins for a link manager system? If not, should I do something like the following:-
i) Webmasters use an add your url form which emails me their site details, (url, link words, description etc)
ii) I then manually post the details under the relevant category (Poker, golf equipment etc)
Sorry if this is real noddy stuff but I’m still trying to get my head around how wp works.
