Using Catagories as "Main menus", Or a better way to do this?

Hi,
I would like to implement a “Blog” style page more than once on my site. I have the usual “News” or “Blog” menu item, but as an artist, a musician AND a film-maker, I would like to implement menu items with these titles, on clicking this menu item I want to display a series of posts, exactly like it does on the “Posts” section.
So basically I need 3 or 4 blog style pages running at once.
Currently I make separate “pages” for everything, and make one “sub index” page (when you click films for example) that I have created by hand and have to update by hand.I have thought of ONE way to do this: Maybe this is the right way, but with some tweaks, that I dont understand.
I write everything as “posts”. but then make Categories for these separate sections. Then my menu can be made from Category headers.
There is 2 problems with this:
a) the category header says “Category Archive” at the top, where I would like to write something meaningful as an introduction to the posts. Plus the posts are all shortened to one sentence, I would like the whole post, or at least to decide where to use “Read More”.
b)My category that I call “Blog” (think of as news) is in the menu and works OK, but as the post page is set to be my Main Page, I cant get the category Blog, only the REAL Blog, that is all recent posts, this includes content meant for specific other pages, (like films).What is the correct way to do this..? I HAVE seen it done that there are simply multiple “Post” style pages… How can I achieve this?
