Update page template meta on Theme Update

I’m currently developing an update to my theme that moves the default page template to a template called “Page with nav”. I’ve developed a different template that I want to serve as the default template. This update will be from version 1.0.4 to 1.1.0.

I think I’ve figured out how to change all pages using the default template in 1.0.4 to use the new page-nav.php template in 1.1.0. What I really can’t seem to find is how to only re-map page templates when updating from anything older than 1.0.4 to 1.1.0. I would expect some kind of hook, but there are two threads here that asked for such hooks and received no replies.
