To clarify, the issue appears to be between the widths of 0-770px.

Update –
I restored a backup version of my site prior to when I updated Astra – this actually then broke most of my site’s CSS and displayed error messages in the sidebar instead of displaying it.
After lots of research, I found that somehow by updating Astra it reverted my backup copy to PHP 7.3 (however at the time of the backup it was PHP 7.4). My host has no idea how this could have happened and neither do I. I haven’t used 7.3 for a while (and nothing should be able to change data in your backup as far as I’m aware – although I’m certainly not an expert on this so I would welcome thoughts contrary to this).
I reinstated PHP 7.4, then had to re-write my entire CSS as no backup copy of my site would work.
Safe to say, I’m not impressed and if anyone could shed light of how Astra could have caused this I would like to know.
Definitely will not be updating it again after this.

Sorry for the unpleasant experience. Just like you, as far as I know, updating a WordPress theme will not change the PHP version running for your site. PHP version is a server-related thing.
And regarding your statement that you will not update the Astra theme again, I don’t think it’s a good idea. Using the latest version of the Astra theme (or any other theme) will make sure to have the benefit of the new features we are adding from time to time, including security patches.
You might just need to update it on your staging site first instead of directly on the live site, as recommended by many WordPress experts, so if the new update breaks your site, your live site won’t get affected. And also, it’s always a good practice to make a backup before doing any update.
