Two days before send date slot

I am making an website for hedge plants and i bought the premium version of your plugin.

I have the following situation:
People can order plants and every tuesday we send away the plants.
We need two days before send day to prepare the order.
Is it possible to put an timeslot on an delivery date so that they can order untill 2 days before. for example: they can order untill friday 16th of october 16:00 for next send date: tuesday 19th of october. But if they order on saturday the 17th of october the next following delivery date should be tuesday 26th of october.

I would like the same settings for pickup of plants.
I can’t find anywhere to put in these settings. Looking forward to your reaction.
