I was able to replicate the error myself.
It goes like this:
1. enter page wp-login.php?action=lostpassword
2. fill in account’s email address
3. I got confirmation (email with reseting link was sent)
4. Receive the email, click on the link inside
5. A page to fill new password loads (it’s OK)
6. When I enter a password and confirm it I get this:

PS:
I switched from PHP 8.0 to 7.4 for troubleshooting and it’s getting better but still some errors:

If the plugin is working fine now then you can Disable Debug mode from wp-config and then check, these are warnings so you just need to disable WP-DEBUG in wp-config.
In the meantime, my QA team will try to reproduce this on my staging website on PHP 7.4 to 8.

One more thing:
When I switched to 7.4 I started getting this notifications delivered to my wordpress admin email:
You getting this message because an error detected while delivered your email.
For the domain: https://platformarozwojowa.pl
The log to paste when you open a support issue:
The to array is required for all personalization objects, and must have at least one email object with a valid email address.
This notification was probably an email that a user changed his password.

One more thing – I reinstalled the plugin (the same problem).
Then I switched the connection type with sendgrid (in Post SMTP wizard) – I changed from SendGrid API to Sendgrid credentials on port 587.
It didn’t help but one thing changed.
Instead of the “array” error I get this:
