Trouble adding more categories and sub-categories.

Newbie here. Please speak slowly.

I am attempting to add more categories. On the menu tab on my page there are currently 3 top level categories: Wedding and engagement, Jewelry, and Gifts. http://norwood-diamonds.com/sales/

I have about 200 categories and sub-categories that I need to add. I seem to be limited to 90. Can I edit the programming somewhere to allow more?

Also, those top tabs and the categories and sub-categories are being created by adding pages int the menu section. I do not seem to need the post categories. Is this wrong?
