gtm4wp.orderCompletedEEC is a legacy event, it is not mentioned in the setup guide. v1.10 still includes it but it will be removed in the upcoming v1.11 version.
Normally, if you have enabled enhanced ecommerce in your GA pageview tag, it should catch order data automatically, without any further setup or GTM event.
I would like to trigger the tag only when the order is completed, so how should I proceed if I remove gtm4wp.orderCompletedEEC ?

This setup article is exactly what you need.
Purchase data will be only included on the order received page but this does not currently take into account whether the order is just placed or processing or payed.
You do not need anything that restricts tag firing on your order received page
Same problem here. Ecommerce tracking does not work any more.
I have this problem since August 26.

I would like to use the normal ecommerce tracking. Not the enhanced ecommerce tracking. Do you have an article where I can read how I should set this up?

Using gtm4wp.orderCompletedEEC was never recommended in docs found on gtm4wp.com. It is a legacy event not really required to properly track WooCommerce orders.
Since this event will be permanently removed in v1.11, I encourage you to review your enhanced ecommerce setup based on this setup guide:
