    It used to be that I could have the TRACKING INFO displayed on the order email that I would manually send, again, but now after the order was shipped. However, for some reason I don´t see such option anymore.

    Yes, on the AST settings, check the “Choose on which customer order status email to include tracking info” option is enabled for the order emails you wish to display the tracking.

    Thanks but it would be nice to be able to also ADD a status named “SHIPPED”. Any additional suggestions would be appreciated.

    Since the completed order is WooCommerce means that you shipped the order, in the same options page, There is option to rename the “Completed” Order status to “Shipped”.
