Thank you for pointing out this bug.
I am also able to replicate this bug at our end where the delivery timeslots dropdown box remains disabled with the auto populated delivery date. The only way to have it enabled is to pick a different date.
I have escalated this bug to our development team so they will work on this soon. In a meantime, as a temporary solution, can you please uncheck the ‘Auto-populate first available Delivery date:’ setting present under Order Delivery Date > General Settings > Additional Settings tab? So the delivery date won’t be auto-populated in the delivery date field.
I will keep you updated on this bug as soon as I will receiving something from our team.

The plugin has been released yesterday in which we included the fix for the issue that you reported. Can you upgrade the plugin to the latest v3.11.9 & check?
