If you choose the “Thumbnail Grid” gallery type, you will be able to define a number of columns. However, if you choose another Gallery type, the number of columns is calculated for you, based on numerous factors (size of the images, orientation, and your theme’s content width).

You can define a custom content width for your theme by following the instructions here:

If you choose the “Thumbnail Grid” gallery type, you will be able to define a number of columns.

I don’t have that option – it doesn’t show. Is there a way of forcing it to more than the default 3 columns via code?

That’s a problem. This option is the default WordPress option. It should appear as soon as you enable the Jetpack Tiled Galleries. If you disable the module, the option disappears, but the number of columns reappears:

As long as you use Jetpack Tiled Galleries, that won’t be possible.
