OK, I’ve found that in Gallery > Other Options > Thumbnail Options I can set the “Set fixed dimension” to ignore the aspect ratio (no portrait thumbnails) and force a square presentation. However, 2 questions remain:
1) I see that images are still being cropped. Can I avoid this?
2) I’ve set the default thumbnail image size to 180 x 180px. However, all of the thumbnails are 120px × 90px. How can I enlarge them?

More progress: I needed to create new thumbnail images for the gallery. I’ve found that in Gallery > Manage Galleries I can use “Bulk Actions” to create new thumbnails.
The final question: I see that images are still being cropped. Can I avoid this?

@meltdown2 – If all of you images are uniformly square and the same size then setting (and creating) a square thumbnail should produce what you are looking for.
If your “original” images are not uniformly square then I would expect, based on the settings you are describing as in use, to see what you are seeing.
If you want to use a different area of the original image for the thumbnail(s), you can edit your individual image thumbnail by going to: Gallery > Manage Galleries … click on the gallery with the thumbnail(s) you want to edit. Hover over the image entry until you see the “Edit thumbnail” link and click on it.
You can then select a different area of the original that will keep the same aspect ratio of the current thumbnail size being used.
Don’t forget to save changes before leaving the gallery page.
