    I’ve uploaded a new version of the child theme, adding a -v2 onto the theme folder name.

    However, my mobile is still viewing the non-v2 theme’s stylesheet.

    How do I force mobiles to respect the new theme without forcing them to clear their cache?

    There is a version number parameter to the function that enqueues the stylesheet. It is intended to force a download since the URL of the stylesheet would change. Putting your new version in a different theme folder doesn’t do the same thing.

    Edit: Also, do you have a cache plugin? If so, you should clear its cache.
