If you’re using Gutenberg, you can find the More tag with all the Layout Element blocks, in the Block Inserter. See here – https://ewp.guide/go/be/more-block
If you’re using the Classic Block within Gutenberg, you’ll find the ‘More tag’ is the 3rd last icon in the top row of the Classic Block toolbar icons.
If you’re using the Classic Editor (i.e. the Visual Editor that was in WP prior to v5.0), you’ll find the ‘More Tag’ in the top row of toolbar icons – https://ewp.guide/go/ce/adding-content-with-the-visual-editor
As for my Ephemeris theme and WordPress 5.3, the More tag works fine. If you have a look at this sample blog on my theme demo site, you’ll see the More tag in use. The first blog post (Catching Big Air) is using the Classic Editor with a more tag, the second Post (The Great Outdoors) is using a More tag in a Classic Block within Gutenberg, and the third Post (The Light in the Dark) is using a More block within Gutenberg.
Lastly, in case you’re not aware, the More tag will only work in Posts, not Pages.

Thank you Anthony for your answer,
well, I have found the tags before you mentioned but I thought it would be a bit strange, having the possibility to use the tag only in posts. I wondered wether there was a way to use it in pages as well. So I will have to choose a plugin instead for this task because in fact my intro-text is not very long when you look at it on a desktop-screen, but it is too much for the screen of the cellphone.
