 * I want to add excerpts for testimonials. Where does the Allegiant theme register
   its custom post types?

 * Unfortunately, it is not possible to add an excerpt to the portfolio items because
   of how the theme was designed.
    You can find the file you need in the plugin 
   CPO content types: cpo-content-types/cposts/cpost_testimonials.php
