submenus, and pointing menu items to specific places

This may be in the area of theme – sorry if in the wrong place.

I’m setting up a music blog for a mate over at threechords.co.uk, and I want the “Home” menu item to point the index page. How do I set this up? I dont want to set up an abitrary front page.

I also want a submenu, underneath home when it is selected, that lists categories. Again, any ideas?
