My post featured images are stretched horizontally and the images within the post are stretched vertically after bulk optimizing with the plugin, ewww image optimizer.

Is there a way to undo the optimization or fix this?

EWWW does not modify your images, or resize them in any way. It merely recompresses the data. What other plugins are you using related to your post featured images? Perhaps one of those is causing issues.
