SKU number help

So sometimes my customers ask to change their orders after they order. Usually just a variation to a product. I change the order to pending payment, and change the order in the description, but I cannot change the SKU number. This messes things up for shipping bc now it’s an order with an incorrect SKU number, and the wrong product could be sent to the customer.

It’s not a huge deal, but would help prevent future mistakes. Any way to do this?
