if I may, I realise I did still the original question to ask – does it matter much that my woocommerce templates are reporting as out of of date?
As we fixed the other issue the site itself is looking and working absolutely like a charm.. but should I be worried? (!)

Where does it show you that the templates are out of date?
I would connect to your server via FTP and manually check the files there for the version to see if they’re up to date or not. If they are, then I wouldn’t worry about it. If not, then re-upload the woocommerce files again.
The last time I had a similar issue was when there was a bug with my caching plugin which prevented new updates to show up and it wouldn’t change the displayed version even when I manually uploaded the files.
Do the cache dance: delete site cache, browser cache, varnish (if enabled on your server), clear your CDN cache (if any). If the problem persists, delete all cache again and disable your caching plugin. That’s where I would start the troubleshooting. GL.

In brief, the error as it pops up in WP is as follows:
Your theme (Lyn child theme) contains outdated copies of some WooCommerce template files. These files may need updating to ensure they are compatible with the current version of WooCommerce. You can see which files are affected from the system status page. If in doubt, check with the author of the theme.
Following a link it provides, I eventually end up at WooCommerce page describing steps to take to update templates manually (my theme is not desinged to run WooCommerce nor declaring support, and so is not updating them itself):

Having reached this point however, I fall at the first step because no templates on my system appear to be reporting as outdated in my WooCommerce > System Status page.
(there seems to be no info provided on templates whatsoever, either to approve versions or report errors. I could send some screenshots perhaps, but I don’t believe I can do so in this forum)
As the steps instruct that you replace only the specific template files that are outdated, I can’t see that there’s much I can do. And in any case, I’m loathe to mess with anything as the website itself seems to be running fine and I’m hearing myself say ‘if it an’t broke don’t fix …’
So this brings me back to the original reason for posting really- am I running a unjustified security risk here, or can I (on my client’s behalf) relax.. ?

Personally, I wouldn’t use a non-woocommerce compliant theme. If your client wants a free theme, you can use WooCommerce’s storefront. Premium themes run for $60 USD on themeforest. That’s where I get all my themes – just stick to high selling themes as that usually means long term support. I can’t say if it’s a security issue or not as this is out of my expertise. HTH.
OK – yeah, well perhaps I’ll not try again. This time I appear to have gotten away with it (so far) and the site’s looking and functioning as we wanted it.
But I appreciate it’s a risk, potentially.
