sidebar ‘pages and subpages’ menu/widget???

    hi guys
    every time i create a new page in the dashboard, i get the page link appear on my top header. my sidebar, with the ‘Pages’ widget, shows ALL the pages i have created. this is quite frustrating because i want to make a menu in my sidebar which shows only the pages and subpages i want to show. is there an easy way of doing this, i have heard you can manipulate the ‘categories’ and ‘links’ widgets to create a menu, as such.

    also, why do ALL my pages show up in the top header? i need to create pages that show ONLY in the sidebar menu, and some that show ONLY in the header. how can i exclude some pages from showing in the top header?
