Show only piece of adress (city, maybe postalcode)

    You can find example of how to use apply_filters here.
    You could put the function you write in your theme > functions.php.
    How you parse to the string to only show the city is up to you.
    It may be difficult to find the city because the whole address is stored in a single string. You may need to hire a developer.
