When you’re deiting your post, there’s a button in the visual editor just after the ‘Unlink’ button that shows ‘More’ when you hover your mouse over it. That butotn inserts a littel snippet of code that tells WordPress to output only up until that point when it’s displaying the list of posts.

You can also enable excerpts in the ‘Scrren Options’ area when you’re editing a post, and the excerpt will be what shows up in the listing pages.
