Shortcode for custom fields? List level styling?

I am updating an accommodations site and have two questions:

#1 – can I add content from a custom field into a list item?
#2 – I wanted to add categories to some of the items. i.e.

Room category one
room one
room two
room three

The list item for each of the rooms will have an excerpt, a thumbnail, and a “read more” link. Obviously the category will need to be styled differently. No link, no “read more”, etc. I can’t set up a separate template for each category as there are 9 categories. What’s the best way to handle this?
