Setting up blog page

I love responsive theme as far I have used it, but I’m having trouble setting up a page where posts from all selected categories are displayed fully. I have tried using Posts for Page Plugin which collects all posts from the selected category, but the posts that are displayed are not fully display, they come with read more… and are like summaries which is not what I want.

Which is the best way to have 2 separate pages(that isn’t home page), where each page collects different posts under it and are fully showed?
