setting index.php to display posts from only one category

  • I’m looking for a way to show only the posts from one category (such as general) instead of all of them when viewing the index.php. I would like the viewer to then select the category to view the other posts within that. Can this be done easily? Does my question make sense?

    Not as critical but if it can be done easily, is there a way of showing the posts for general but not having it as a category choice for the viewer? I’m pretty sure I can figure this one out but I’d like to know some of your ideas. They would probably be prettier than mine.
