I’m thinking this plug-in will work for our conference if I can figure out how to set the times on the workshop posts. Right now they all say 4pm to 4pm.

How can I set the correct start and end times on workshops?

The start and end times are set on the Session term, so go to Conference -> Sessions and create/edit sessions for each timeslot you need, and then assign the workshop to the right sessions.
