Could you explain why, or how you would use that, because you can edit the post date anytime.
Is it just a matter of controlling the order of the posts when they display on your blog?
I am using TDO Miniforms and I would like to add a date picker for the user to choose when they want their post to appear on the website. I would like to pass the information from the date picker into a Custom Field so that the post will not show up until the date picked. I was just wondering if it would be possible to pre-date a posts publish time using a Custom Field rather than WordPress’s post editor?
Come someone has to know how this can be done…

Possible, yes. You’d likely have to set your blog to only show a post if the time on that custom field had passed but … why reinvent the wheel?

To schedule a post for publication on a future time or date, click “Edit” in the Publish area next to the words “Publish immediately”. Change the settings to the desired time and date. I guess the thing here is ‘What is it about the forms you’re using that don’t allow you to use this helpful built in feature of WordPress?’
TDO Mini Forms allows the user to create a post outside of WordPress VIA a web-form. It doesn’t use WP’s default post editor.
