From my understanding, you do not want to populate the first available delivery date in the Delivery Date field on the checkout page.
Yes, this requirement can be achieved by disabling the ‘Auto-populate first available Delivery date’ setting which is present under the Date Settings tab.
When the setting is enabled then the first available delivery date will be populated when the checkout page loads in the Delivery Date field otherwise it will not be populated.
