    Is it possible to use jQuery datatables server-side processing functions with this plugin? I am looking to speed up display of large datasets from a MySQL source…

    Yes, it is, but you have to supply your own server-side code for this. Adding the server-side code to this plugin is on the roadmap but is not actually implemented yet.
