You can simply choose Organization in the setup wizard as the Business type.

I have custom post type named “listings”.
I want to set schema for “listings”. What schema should I select for that.

On the archive pages, Rank Math automatically adds the itemList Schema.
If you are adding on the individual CPTs – then you could use the Service Schema:
