 * Is there a way to save changes to an edit of a post without publishing the changes?
When I click the “Save and Continue Editing” button, it immediately updates the
post while editing is ongoing. For clarification, this is not speaking to new
   posts, just editing old ones.

 * Unless you unpublish it (i.e. set it to draft again), then it’s not possible.
Edits are written directly updated to the content column in the DB i.e. there
is no such concept of a “inprocess save”.
