Thank you for getting back to us. The theme in question is hestia-pro. We reached out to support about this, but they claim that if we don’t have this feature available in wordpress or the plugin that they recommended and we used (WP Rollback) is not working, then there is nothing to do about it.
Either way, this must be a feature of wordpress and we shouldn’t be needing the use of external plugins to adjust this functionality.
Going back to the inquiry, do you know if this functionality exist in wordpress? If so, which version?

No. WordPress core does not have a function to roll back your theme or plugin. It neither needs to have. Please check the Philosophy here https://wordpress.org/about/philosophy/#clean
The WP Rollback plugin is not meant to work with premium plugins & themes.
hestia-pro must be maintaining the older versions of the theme. So simplest way is to get in touch with theme support and request the older version of the theme (the one you had before) that was working for you.
We’ll check the info you provided. We didn’t know the plugin used is not for premium plugins and themes. We’ll let the support know about this. Thank you for your help.
