Removing Blogroll and Catorgies from my blog & listing pages other than by alpha

I have just created my blog and don’t want the Blogroll or Catorgies showing on the home pages. How do I remove them. Also, I have 13 pages that are showing up in alphabetical order but would like to arrange them in groups. Can anyone tell me how to fix these to features? I have been at it all day and gotten nowhere!
