 * Hi there,
 * I have modified class-amp-gallery-embed in order to allow image captions on WordPress
   galleries to show in amp-carousel.
 * However, I have no idea how to remove the existing AMP_Gallery_Embed_Handler 
   class and replace it with my own, so that my changes do not get overwritten every
   time the plugin is updated.
 * What is the easiest way to go about doing so? Thank you.
