 * Is there a simple way to delete all categories and all references to it?

 * No and yes.
    You can not have posts outside of categories: you need at least 
   one category to have posts assigned to it. Yes, you can remove references to 
   it – by editing your template files and deleting/commenting out any ref to categories.
