If I understand correctly, you would like to make all the checkout fields readonly? Should this apply only to subaccounts or parent accounts as well?
If, instead, you want subaccounts to inherit billing and/or shipping addresses from their parent, this feature is only available in the premium version of the plugin.

That’s not exactly it. I have hidden the checkout fields using CSS and introduced my own version of them that are already read-only. What I would like to do is remove the option of adding a new address in the dropdown, where the user can select their predefined addresses and optionally add a new one.

Does enabling the option “Force shipping to the customer billing address” in: WooCommerce → Settings → Shipping → Shipping Options → Shipping
solve your problem?
Unfortunately not. I don’t want the user being able to change the shipping or billing address at checkout. I would simply like to remove the final option in the address book shipping and billing dropdowns where the user can choose to add a new address.

The address book functionality shown in the picture is not a default WooCommerce feature, that is most likely added by a plugin.
If you want to disable that feature entirely, you can simply locate the plugin responsible for that feature and disable/delete it.
If instead you want to disable that functionality only for specific users (e.g. for subaccounts only) that should also be possible, but will require some customization.
